Grilled Chicken Drumsticks with Seasoned Potato Wedges & Fresh Slaw

A delicious and easy Aussie family dinner that’s ready in under an hour! Juicy grilled chicken, crispy potato wedges, and a fresh creamy slaw – the perfect weeknight meal.

Ingredients (Serves 2)

For the Chicken:

  • 6 chicken drumsticks

  • 1 tablespoon olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For the Potato Wedges:

  • 4 medium potatoes, cut into wedges

  • 1 tablespoon olive oil

  • 1 teaspoon dried parsley

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For the Fresh Slaw:

  • 1 cup coleslaw mix

  • ¼ cup mayonnaise

  • 1 teaspoon lemon juice

  • Salt and pepper to taste

  • 6 fresh cucumber slices

Instructions:

  1. Season the Chicken In a bowl, mix the olive oil, paprika, garlic powder, onion powder, salt, and pepper. Rub the mixture all over the chicken drumsticks. Let them sit for 10 minutes while you prepare the potatoes.

  2. Prepare the Potato Wedges Preheat oven to 200°C (400°F). Toss the potato wedges with olive oil, parsley, salt, and pepper. Spread them on a baking tray and roast for 35–40 minutes until golden and crispy.

  3. Cook the Chicken Grill the drumsticks on a hot grill or bake in the oven at 200°C for 35–40 minutes, turning halfway, until golden brown with lightly charred edges and fully cooked.

  4. Make the Fresh Slaw Mix the coleslaw with mayonnaise, lemon juice, salt, and pepper. Keep it in the fridge until ready to serve.

  5. Plate & Serve Serve the crispy potato wedges on the plate, place the juicy grilled chicken drumsticks on the side, add a generous portion of creamy slaw, and finish with fresh cucumber slices.
